The LAB is Here

Lab equipment came yesterday.  Test tubes, stir plate, pressure cooker, beakers, flasks, agar, etc.

Received a slant of ECY01 and ECY04, just took the 01 starter off the stir plate.  Plan is to make more slants and use this one in summer after a turbid mash.

ECY01 BugFarm:  A large complex blend of cultures to emulate sour beers such as lambic style ales. Over time displays a citrus sourness and large barnyard profile. Contains yeast (S. cerevisiae and S. fermentati), several Brettanomyces strains, Lactobacillus and Pediococcus. The BugFarm blend changes every year and can be added at any stage of fermentation. Now producing Bugfarm 6 for 2012 (includes a newcomer – Brettanomyces nanus & naardenensis). Also, B. lambicus/Dekkera bruxellensis known to produce citric acid.

Ich bin Berliner


 Brewed a new beer for this summer:  Berliner Weisse.  Targeted to be a low 3.4% ABV, this beer will be tart, light, and refreshing.  Perfect for a summer night's bag toss tournament.  Whole Hersbrucker German hops add a balance of bitterness to the bold wheat flavor of this little beer.  Mashed for four days, sparged and pasteurized yesterday, this beer will be ready for the first day of summer.

First

This is the first entry in what is to be a record of building Chugach Brewing Co from the ground up.  Chugach Brewing will focus on brewing traditional beers with bold flavors using the best ingredients and practices.  Come on out and have a beer.
